Pineapple Martini

Head Chef Mike created a pineapple syrup for this fabulous Pineapple Martini. To create the syrup:

  • 200g fresh pineapple

  • 150g sugar

  • 150ml water

  • Tiny pinch of salt

  • Little vodka to preserve (optional)

- Peel, core and chop the pineapple. - Add 200g pineapple and sugar to a bowl. - Rest for 3 hours or overnight (until sugar draws out the liquid). - Add the water and heat gently until sugar dissolves - Pour through a strainer into a bottle . Add the vodka to make it last longer.

Then to make the cocktail:

- Hard shake, double strain into a chilled martini glass. Garnish with a thin pineapple wedge.
